Get a little temperature control right, stay clean, and you can make beer you'd happily hand to a friend.
Here's the reassuring part: if you've been thinking about brewing for a while, you probably already own most of what you need. A few empty bottles, a big pot, and a bit of counter space go a long way. You can start with almost nothing and still pour a genuinely good glass at the end.
This is a hobby that welcomes both extremes. Begin bare-bones and upgrade only when you feel like it, or jump straight to a fuller setup β both paths work. The things that consistently matter are simple: get started, keep a few notes, and give the beer time.
The real fun shows up after your first batch. You crack one open while brewing the next, taste what worked, and quietly tweak the recipe for round two. That loop is the whole hobby β and it's a lot closer than most people think.

The bare-minimum kit when you already have extract, yeast, and bottles
You've got the extract. You've got a pack of yeast. You've got a stack of empty bottles waiting in the garage. Congratsβyou're already most of the way there. The rest is almost insultingly simple.

That's it. No siphon required if you're careful and don't mind a little sediment in the bottles. No fancy thermometer if you're willing to trust that a rolling boil is hot enough and that the wort will eventually cool on the counter or in an ice bath in the sink. No hydrometer for the first few batchesβjust taste it later and decide if you like it.
You can make perfectly drinkable beer with exactly this list β it's been done on hotplates and in kitchens barely big enough to turn around in. Your first batch won't win awards, but it'll be beer you made, and that first genuinely good sip makes the whole minimal setup feel like a win.
Start there. Jot down what you did. By the next batch you'll already know what you want to add.
There are basically two ways to make wort, and one of them hands you a big head start. Begin with extract, get comfortable over a few batches, then graduate to all-grain whenever curiosity strikes. There's no rush and no wrong order.

Extract plus a handful of specialty grains is the sweet spot for a first or second batch β real color, flavor, and body without a mash tun or a chemistry degree. Here's the whole process, start to finish, kept as simple as it gets.
Anything that will touch the cooled wort or the finished beer needs to be sanitized β fermenter, spoon, airlock, bottles, all of it. The only thing you want growing in there is the yeast you paid for. Anything else turns your beer into science-fair regret.
Heat 2β3 gallons of water in your pot to about 150β160Β°F. Drop the grains in (in a muslin/mash bag or something you can pull out later) and let them steep 20β30 minutes. This is just hot tea β you're pulling color, flavor, and a little body out of the grain without converting any starch. Don't let it boil, or you'll drag out harsh tannins and make the beer astringent.
Not every batch comes with grains β plenty of extract kits skip them. If yours didn't include any, ignore this step and start at the boil.
Lift the grain bag out, let it drip for a bit, then toss it β you're done with the grains. Bring the liquid up to a boil. From here you're just making a hoppy sugar water that the yeast will later turn into beer.
Once it's boiling, kill the heat for a second and stir in the extract until it's fully dissolved, then turn the heat back on and bring it back to a boil. Dumping extract into a rolling boil scorches it on the bottom of the pot, and scorched extract tastes exactly as bad as it sounds. Watch the pot like a hawk when it comes back up β a boilover will happen if you look away, especially in a small pot.
Add hops according to your recipe and boil a full 60 minutes. The boil sterilizes the wort, drives off compounds you don't want, and pulls bitterness from the hops. Timing is the whole trick:
When the boil's done, cool the wort as quick as you reasonably can β an ice bath in the sink works fine. Yeast hates being pitched into hot liquid, so cool it down enough that you don't kill them, and so wild microbes have less time to party before your yeast takes over.
Pour or carefully transfer the cooled wort into your sanitized fermenter, topping up with clean water to your target volume if needed. Then pitch the yeast. This is where the magic starts β the yeast eats the sugar and makes alcohol and COβ. Everything before this was just cooking.
This is the one moment a little splashing is your friend β cooled wort wants some oxygen so the yeast can get going. Let it tumble in and aerate. Just keep everything it touches sanitized, so the only thing you're adding is air, not contaminants. (After fermentation starts, it flips: pour gently and keep oxygen away.)
Seal it with an airlock (or the sad balloon method) and set it somewhere out of direct sunlight at a reasonable room temperature. Leave it alone for 1β2 weeks. Fermentation looks boring β bubbles, then quiet β so don't open it every day to check. Patience is the actual secret ingredient.
When it's done (airlock slows way down, or you just wait out the full time), bottle it with a little priming sugar, cap it, and wait another 1β2 weeks. The yeast left in the bottle eats that sugar and makes the bubbles. Don't rush it β too soon and you get flat beer or bottle bombs, and neither is ideal.
That's the whole process. Keep notes on what you did and how it tasted later. Next batch, you'll already know what to tweak.

Once extract feels routine, all-grain is the natural next step. Instead of buying your sugars pre-made, you create them yourself by mashing crushed grain. It's a longer brew day with a bit more gear, but you control every variable. The back half β boil, cool, ferment, bottle β is identical to extract, so you already know it. Only the front end is new.
Mix your crushed grain with hot water in the mash tun and settle in around 148β158Β°F. Hold it there for about an hour while the enzymes turn starch into sugar. Where you land in that range matters: aim low for a drier, crisper beer, aim high for something fuller and maltier. This is the dial that used to be hidden inside the extract.
Bump the temp up to about 168Β°F to lock things in and loosen the mash so it drains well. Then draw off the first runnings β they'll come out cloudy β and gently pour them back over the top. Do that until they run clear. You're basically letting the bed of grain husks become its own filter.
Slowly trickle ~170Β°F water over the grain to rinse out the sugar it's still holding onto, collecting runnings until your kettle hits its pre-boil volume. Slow and steady wins here; rushing it leaves sugar behind.
Now you're back on familiar ground. Boil that wort a full 60 minutes with the same early-for-bitter, late-for-aroma hop schedule you used with extract. Keep the lid off and let it go hard β a good rolling boil drives off the stuff you don't want in the finished beer.
From here it's identical to your extract batches: chill it fast to ~70Β°F, take your Original Gravity, pitch the yeast, ferment a week or two, then bottle and wait. Everything you learned on the easy path still applies.
Want the flavor without the full rig? There's a shortcut called Brew-in-a-Bag (BIAB) β you mash and boil in one kettle using a big nylon brew bag, then just lift the grain out. It's real all-grain with almost none of the extra hardware, and it's how a lot of people bridge the gap before committing to a mash tun and all the plumbing.

Easygoing, well-balanced, and hard to mess up β an ideal first extract recipe. Makes a 5-gallon (19 L) batch. Prefer it boxed and ready to go? Grab a complete American Pale Ale extract kit β or, when the weather turns, an Oktoberfest kit.
A basic extract starter kit (just about everything you need to start, except the bottles and a recipe kit) plus an ingredient kit typically runs about the price of a nice dinner out. After that, each 5-gallon batch β roughly 50 bottles β usually costs less per beer than buying craft beer.
Poor sanitation and fermenting too warm. Sanitize everything that touches the beer after the boil, and keep fermentation in the yeast's happy range (around 65β70Β°F for most ales). Nail those two and your beer will taste clean.
Plan on roughly three to four weeks: one to two weeks fermenting, then about two weeks of bottle conditioning to carbonate. It's slow, but almost all of that is hands-off waiting.
Temperatures and sanitation matter most. Ingredient weights have some wiggle room β beer is resilient. As you brew more, a hydrometer helps you dial in consistency and calculate your ABV.
In the U.S., homebrewing for personal use is federally legal, with limits on annual volume, and it's permitted in every state β though local rules vary. Check your state and local regulations, and never distill spirits at home, which is a separate and heavily regulated matter.
